Any number of things could happen in the next 6 weeks stopping you from completing it.

I think it would be good for me to put on my future education plans on my resume. Is there any decent way to do this? If you accepted an offer, then you can write an "anticipated graduation" or something along those lines.

If you have not accepted or even received an offer, and you are just "planning," then I don't think it's acceptable to list explicit institution names. Maybe write in your Profile or Branding Statement sections "Interested in pursuing graduate studies in xyz.
